Capsicum Brinjal curry is a wonderful side dish for rotis, chapati and rice.
Capsicum have low calories and I prefer as a diet food. Its tastes good when mixed with brinjal, onions and tomato.
The ingredients list servers 2-3 people and just takes 15 mins time to prepare.
Ingredients:
3 Indian brinjals/eggplants
1/2 cup capsicum/bell pepper
1/2 cup chopped onion
1 tomato(optional)
2 garlic pods
1 tsp grated ginger
1 green chilli
2-3 tbsp oil
1/2 tsp cumin seeds
Salt
1/2 tsp chilli powder
1 tsp sambar powder(optional)
1/4 tsp turmeric powder
1/2 tsp coriander powder
Coriander leaves to garnish(optional: I haven't used here)

Method
- Heat oil in a pan. Add cumin seeds and allow them to crackle.
- Add onion, ginger, garlic, green chilli slices and saute till onion turns transparent.
- Add sliced brinjal and fry till brinjal is partially cooked.
- Add capsicum, tomato and spice powders and some salt for taste.
- Fry till the veggies turn soft.
- Garnish with coriander leaves and serve hot.
